Peach 🍑 Crisp

Fresh Peaches when in season tempt you to try out a variety of desserts. Most of the ingredients are similar to Peach cobbler. The only variation is that in a cobbler the peaches are at the bottom and in the crisp the peach slices are spooned on the top of the crisp layer of l rusty base.

One can use fresh or canned peaches. I have used one big sized peach and since they were sweet I have reduced the sugar slightly.

Ingredients:

Oats – 1/4 cup

Brown Sugar -1 + 4 table spoons

Whole wheat flour – 1/2 cup

Vanilla essence – 1/4 spoon

Fresh Peach – 1 big one

Wheat crackers -2

Nutmeg powder – less than 1/4 spoon.

Lemon juice – 1 spoon

Butter – 2 table spoons

Pecans – 4 cut into bits

Method:

Preheat the oven for about ten minutes at 180° Celsius.

Now add a table spoon of brown sugar granules to the sliced peach and keep aside .

Take a deep bowl and add 4 table spoons of brown sugar, butter and with the help of your fingers lightly mix it.

Add in the whole meal flour and the oats and oats and lightly run in with your fingers.

Add the nutmeg powder and the crushed wheat crackers and mix well.

Now coat the baking pan with a little butter and spoon in the mixture into the pan and pat them evenly.

Now pour the peach slices to which brown sugar and vanilla was added, into the baking pan.

Spread it evenly.

Add the pecan bits on the top.

Bake the Peach Crisp for about 25 to 30 mins.

Enjoy hot with some Vanilla ice cream.

Carrot Ice Cream Carrot

Loved the creamy texture as well as the taste of carrots in the ice cream.

Ingredients:

1 carrot chopped and cooked.

1.5 cup milk( full cream)

1/2 cup sugar( I have used brown sugar)

Milk Cream-1 cup

Method:

In a blender add a little milk and the chopped carrot and blend it well and keep aside.

Now in a saucepan add the milk and boil it till it thickens and then add sugar and mix well.

Allow to cool.

Now in a mixer blend the milk, carrot paste and cream.

Pour it in an air tight container and freeze for about 4-5 hours.

Now blend the frozen ice cream again and and freeze it for another 5-6 hours till done.

Apple & Cinnamon Ice Cream

Lovely combination of Apple and Cinnamon which leaves you wanting for more …Enjoy it as is or on a sizzling brownie.

Ingredients:

1.5 cups milk.

1 Apple skinned , steamed and made to paste.

Custard powder- 1 tablespoon

Cream-1 pack (200 ml)

Sugar-1/ 2cup

Cinnamon powder-2 pinches.(just for the flavour)

method:

In a heavy bottomed pan add sugar and slightly caramelise it and as it gets caramelised, add milk and cook till it thickens.Allow it to cool.

In a mixer blend the steamed apple with custard powder, cream and 1/4 cup milk.keep it aside.

Once the milk cools blend all the ingredients in a blender and freeze it for 3 to 4 hours.

Now blend the partially set ice cream again in the blender and add the cinnamon powder and mix well and freeze again to set for another 5-6 hours and enjoy the ice cream which is yummy and soft.

Black Berry Ice Cream

Black Berry Ice cream

Ingredients:

1 Cup Heavy cream

4 table spoons Condensed milk

1 .5 cups Milk

8-10 Black Berries

Method:

Take a pan and boil the milk and add condensed milk and cook until it thickens.

Now allow it to cool.

In a blender blend the above mixture and cream.

Add the berries and just blend for 2 seconds.

Freeze the above mixture in a container and cover it with a foil and then the lid.

When it’s partially frozen remove it from the freezer and blend it once again.

Freeze for another 6-7 hours and now the ice cream is ready to be scooped and served with fresh berries.

Sweet 🌽 corn Ice Cream

The caramelised sugar gives a lovely flavour to the corn ice cream!

Ingredients:

1/2 cup cream

1/2 cup corn

1+1/4 cup Milk

1/2 cup Brown sugar.

Method:

Steam the corn kernels and allow to cool.

Blend them in 1/4 cup milk and strain it and keep aside.

Now in a saucepan add the sugar and allow it to caramelise and then pour a cup of milk and allow it to boil.As it thickens put off the flame.

Allow the mixture to cool and then blend the corn paste, thickened milk and cream.

Now transfer to a container and freeze it for 4-5 hours.

Once it sets blend it again in a mixer and allow it to set in the freezer for another 4 to 5 hours.
