Refreshing Cucumber salad with onions and Beetroot

Salads are refreshing and add colour and zest to the meals.They complete the meal and is also nutritous and natural source of fibre which is essential for a healthy living.

 

Ingredients:

Cucumber – 1 (sliced thinly)

Beetroot – 1 halved and sliced thinly

Onion – 1 halved and sliced thinly

Chat masala – 1\2 spoon

Lemon Juice -1\2  lemon

Black salt – As per taste

Method:

In  a plate arrange the cucumber, beetroot and onion slices and sprinkle the black salt, lemon juice and finally the chat masala.

Garnish with chopped coriander leaves and enjoy the cool salad as a side with meals.Cooling and refreshing.

Kokum Saaru

Had some fresh kokum peels and so soaked them and cooked them and made devastana saaru or burri jevan saaru what we Amchis call it.

I have just replaced the tomatoes with kokum.

Tastes so yumm.

Ingredients:

Chana dal-1 spn

Kokum peels-5-6

Water -2 cups

Grated coconut-1 table spn

Cumin-1/2 spn

Coriander seeds-1 .5 t spn

Pepper corns-6 to 8

Urad dal-1/2 spn

Red chillies-3

Hing- big as a pea

Oil-2 table spoons

Salt as per taste

Coriander leaves chopped-1 handful

Method :

Jaggery grated-1 table spoon

Curry leaves-1 sprig

Mustard-1/2 Tspn

Method:

1.Heat a spoon of coconut oil and roast the chana dal followed by urad dal, methi seeds,cumin, coriander seeds, pepper corns,red chillies, kokum peels and grated coconut.

2.Now grind it to paste along with Hing and water.

3.Add a little water and the ground mixture to the kokum water and salt to taste and jaggery.

4.Give a proper boil and temper it with mustard seeds and curry leaves in a spoonful of coconut oil.

5.Garnish with coriander leaves.

Frozen Berries & Oats Smoothie

A creamy textured smoothie rich in antioxidants and natural sugar.

Healthier option as no extra sugar is added.

You may add a spoon of honey if needed.

Ingredients

Oats-1/4 cup

Frozen berries(Strawberries,Cherries,Blue berries,Black berries and Ras berries)- 2 table spoons

Chia seeds-1/4 spoon

Walnuts-4-5

Method:

Blend all of the above and pour in a cup.

The smoothie is ready!

1/2 banana

Milk, yogurt or Soya milk( I have used milk)

Almond Kheer (Badam)

Almonds(Badam )Kheer

Ingredients:

Almonds-1/2 cup

Milk-2 cups

Brown Sugar-3table spoons

Cardamom-3-4pods powdered.

Method:

1.Soak 1/2 cup almonds for about 3 hours.

2.Peel the skin and adding a little milk make a paste and keep aside.

3.Take about 5-6 almonds and chop them length wise and keep aside.

4.Take a saucepan and boil the milk

5.Now lower the flame and add the chopped almonds and the paste.

6.Add the sugar and allow it to simmer for about 5 mins. 7.The mixture will get thicker and you may add a little milk to it to get the consistency you wish as per your taste.

8.Garnish with cardamom and the kheer is ready.

Banana Stem Raita

Banana stem is very beneficial and is highly nutritious.

It’s used for many health issues like regulating the blood pressure and cholesterol.

Healing kidney stones. Digestive problems like acidity and gastric issues.

Including it in ones diet on a regular basis helps to keep ourselves healthy.

Ingredients:Banana stem-1 piece.(tender stem)

1 spoon Lemon juice

Salt -1/2 spoon

Curds3 table spoons

Green chillies-2

Red chilli-1

Asafoetida-2 to3 pinches

Mustard-1/2 spoon

Coconut oil-1 spoon

Salt as per taste.

Method:

1.Cut the banana stem into half and remove the fibrous skin.

2.Only the tender part of the stem is used.

3.In a vessel take some water and add some salt and lemon juice in it.

4.Now chop the tender part of the stem into tiny bits. Put them into the salt and lemon water for a few minutes.

This is to avoid oxidation.

5.Strain the water.

6.Add about 3 table spoons of curds and add salt to the chopped stem, mix well and refrigerate it.

For the seasoning:

Heat 1 spoon of coconut oil and add 2 finely chopped green chillies ,1 red chilli and 1/2 spoon mustard seeds and a pinch of hing and when it splatters add it to the mixture.

Mix well and the raita is ready.

Banana suji rava tawa fry

Nendra bananas which are a speciality of Kerala is normally used for this rava fry.

Ingredients:

Chilli pdr-1 table spoon.

1/2 spn coriander seeds powder(coarse)

1/4 spn jeera pdr(coarse)

Salt to taste.

1/2 spn lemon juice

1 table spoon rice flour.

Method:

1.Slice the ripe bananas.

2.Take all the above ingredients and mix well.

Marinate the banana slices with the above mixture

and keep it aside for about 30 mins.

3.Roll them in suji rava and shallow fry on a tawa(Preferably a iron tawa)

4.Add a little ghee instead of oil around the fritters and roast them on low flame till they turn golden.
