Fruits And Berries Raita

One of my favourite raita which is refreshing in the summer heat and also a healthy option as it has yogurt which is a probiotic and berries which are high in antioxidants. I have added a scoop of vanilla ice cream to the yogurt to get a creamy texture and so a little high calorie wise.

INGREDIENTS

  1. Vanilla Ice cream-1 scoop
  2. Green grapes -1/4 cup
  3. Pineapple bits-1/2 cup
  4. Curd 3/4cup
  5. Black berry-4-5(chopped)
  6. Strawberries-3 sliced
  7. Pepper-1/4 spoon
  8. Kala namak-1 pinch just for the flavour
  9. Chat masala-2 pinches.
  10. Salt as per taste.

METHOD:

  • Take a bowl and mix the ice cream and the yogurt
  • Add all the chopped fruits and salt and mix well and garnish with chat masala and black salt.
  • Serve it cold.

Roasted Capsicum salad & dip

 

Roasted Capsicum Salad

Ingredients:

1 Eggplant

1 Red Bell pepper

1 Tomato

3-4 Garlic cloves

1/2 handful Parsley chopped

1 spn Lemon juice

Salt as per taste

Pepper as per taste

Olive oil-2 table spns

2 spoons of crushed coriander and mint leaves.

Method:

Poke holes or make slits in the eggplant and insert the garlic cloves in the slits made.

Smear a little oil all over the eggplant and roast it directly over the flame .

Once it’s properly roasted, peel off the charred skin and mince it with a knife.

Now follow the same procedure of roasting with the tomato as well as the Capsicum.

Mince the tomato,Capsicum as well as onion and mix well with lemon juice,pepper and salt as per taste and chopped coriander and mint leaves.

Salad is ready.

Chill and serve.

For the dip:

You skip the coriander and mint leaves leaves

and blend it to a smooth paste.

Garnish with chopped parsley and serve it chilled as a dip.

Cauliflower Bhajo/fritters

Ingredients:

Cauliflower florets-10-12 pieces

Besan-1/2 cup

Red chilli powder-1/2 tspn

Turmeric powder-1/4 spn

Corn flour-1 table spoon

Dhania jeera powder-1 t spn

Salt as per taste

Oil for frying the fritters.

Water to mix the batter.

Method:

In a bowl mix all the ingredients and then add the water little by little until a thick batter is formed.

Keep it aside for about 10 mins and then dip the cauliflower florets into the batter one by one and fry them on medium heat until golden brown.

Enjoy with chilli sauce.

Avocado Sandwich

Do try these delicious Avocado sandwiches . Healthy and fulfilling breakfast or brunch with a cup of hot steaming ginger tea.

Ingredients:

1 Avocado

1 t spn Lemon Juice

2 Garlic cloves

Salt to taste.

Green chillies crushed-2

Method:

Blend all of the above to paste and toast the bread slices.

Butter them and then the Avocado spread.

You may add sliced tomato, cucumdber, onions,Avocado or peppers as filling.

Brown Bread Sandwiches

These brown bread sandwiches are an all time favourite and an wholesome breakfast which is not only nutritious but satisfying.

Ingredients:

Brown bread-8 slices(toasted)

Butter-2 table spoons

Tomatoes 2 sliced

Onions-1 sliced

Potatoes1 boiled and sliced

For the chutney:

Coriander leaves-1 handful

Mint leaves-2 sprigs

Garlic cloves3

Hung curds- 1/4 cup

Ginger1/2 “piece

Cumin seeds-1/4 Tsonga

Salt as per taste

Method:

Blend the above to a smooth paste and the chutney is ready.

Now toast the bread and apply butter and then the green chutney and the veggies and enjoy the sandwich..

Corn & Mayo sandwich

Corn Sandwich:

Tender Corn 1 cup

Onions-1(fine chopped and roasted)

Veg Mayonnaise-2 table spoon

Pepper 1/4 spn

Milk-1 table spoon.

Chilli flakes-as per taste

Salt as per taste.

Boil corn in about 1 cup of water and when it’s cooked strain it.

Take a bowl and add the roasted onions,Mayonnaise, pepper, chilli flakes,milk and salt.

Mix well and refrigerate it.

Take a slice of bread and apply butter lightly( optional)

Then put the cold corn mixture over the bread.

Cover it with buttered slice of bread and the sandwich is ready.
