This is a delicious melt in the mouth Halwa, rich in nutrition as it has dry fruits and pumpkin cooked in ghee and then milk.
The Khoya and pumpkin combination I felt is awesome!
Ingredients:
1 cup grated pumpkin
Brown sugar -2 table spoons
Milk powder-3/4 cup
Cardamom-4-5 pods finely powdered.
Ghee around 2 table spoons
1/2 cup milk
Khoya-
Silver vark (Silver foil) to garnish(optional)
Slivered Almonds-1 spoon
Chopped walnuts 2 spoons
Cashew nut bits 1 spoon
Dates chopped-4-5
Raisins 1 spoon
For the Khoya(home made)
Take about 3/4 cup milk powder in a bowl and by adding little milk knead it to a soft dough.
Cover it with a dry cloth and steam it for about 10 mins. Keep aside to cool.
Method:
Meanwhile take a heavy bottomed pan and add ghee and sauté the grated pumpkin on medium heat for about 5-6 minutes.
Now add the milk and cook for another 5 minutes.
Add the sugar and the nuts and the Khoya mixture and mix well.Garnish with the Vark.(optional)
You may add more ghee if necessary.
Also you may use fresh ready made Khoya in place of the home made one.
Pumpkin Halwa is ready to be served hot or cold.
