Polish Almond Soup(Poland)
Zupa Migadalowa as the Polish call it, is a traditional dish enjoyed as a starter or in the midst of a meal on Christmas eve dinner.
They have this piping hot and break an egg over the soup and relish it
Being a vegetarian by choice I have skipped the egg and have garnished the soup with golden raisins, pinch of cinnamon and slivered almonds.
Ingredients:
1.5 cups Milk
1/2 cup Almonds
1/4 cup cooked Brown rice(an healthier and tastier choice)
Almond essence(optional)
1 Egg(optional)
4 spoons of Brown sugar
2 almonds slivered for garnishing
1 table spoon golden raisins.
2 pinches of Ground Cinnamon powder.
Method:
Heat Milk and when it begins to simmer add ground almond powder and mix well.
Let it simmer until it thickens.
Add sugar, Almond essence and cooked Brown Rice and simmer for another 4-5 mins.Add more milk if required.
Transfer it to a bowl and garnish it with raisins, cinnamon and almonds.
The Almond soup is now ready.
