Boiled Rice and Mung Dal Khichidi:Boiled Rice and Mung Dal Khichidi:

Wholesome meal.Khichdi is a balance of carbohydrate and protein. Moong beans additionally are a good source of dietary fibre.

I have prepared this Khichidi using Red Matta rice.This can be substituted with red rice or even normal parboiled rice.

Loved the texture and mild flavours. Yummy comfort food.

Ingredients:

Red Rice -1 cup

Mung dal-1/2 cup

Cumin -1 T spn

Red chillies-2 t spn

Turmeric per-1/2 t

Asafoetida-1/4 son.

Spring Onions-2 sprigs

Bottle Gourd/Lauki -cut pieces 1/2 cup

Onion-1 chopped finely

Carrots-1 cut into pieces

Lemon juice-1 spn.

Curry leaves-2 sprigs

Ghee/Oil-2 table spoons.

Coriander leaves to Garnish Salt taste

Method:

Wash the rice and dal separately and cook it separately with double the amount of water.(Dal-3 whistles and Rice-5-6 whistles.)

Take a kadai and add the cumin seeds.As it crackles add chopped green chillies,Onions,turmeric and chopped carrots and lauki. On closed lid and low heat cook for about 6-8 mins.

Add the cooked Dal and the boiled rice and salt.

Mix well and let it simmer for 5-8 mins.

Heat a spoon of oil and when hot add asafoetida and pour over the mixed Khichidi.

Garnish with coriander leaves and Serve it hot with ghee.
